What a quarter or half beef costs
Bulk beef is priced on hanging weight, which is the weight of the carcass after harvest and before it is cut into steaks, roasts and ground beef. You pay $10 per pound of hanging weight, and that price already includes all butcher fees for cutting, wrapping and freezing. There are no surprise processing charges at pickup.
Every animal is a little different, so the numbers below are typical ranges. Evan will confirm the exact hanging weight of your share before you pay the balance.
| Quarter Beef | Half Beef | |
|---|---|---|
| Typical hanging weight | 175 to 225 lbs | 350 to 450 lbs |
| Price at $10/lb | $1,750 to $2,250 | $3,500 to $4,500 |
| Take home meat in your freezer | roughly 110 to 145 lbs | roughly 220 to 290 lbs |
| Freezer space needed | about 4 to 5 cubic feet | about 8 to 10 cubic feet |
| Deposit to reserve | $150 | $150 |
The deposit comes off your final balance. The remainder is due when your beef is ready.
Hanging weight vs take home weight
This is the part that surprises most first time buyers, so here is the plain explanation. Hanging weight is not the same as the amount of meat you bring home. During aging and cutting, moisture is lost and bone, trim and fat are removed. On average you take home about 60 to 65 percent of the hanging weight as finished, wrapped cuts.
So a half beef that hangs at 400 lbs costs $4,000 and fills your freezer with roughly 240 to 260 lbs of Wagyu steaks, roasts and ground beef. That works out to about $15 to $17 per pound for everything, including the ribeyes, New Yorks, tenderloin and brisket. Compare that to buying those same cuts individually and the savings are significant.
What cuts you get
A half beef gives you a complete cross section of the animal. A quarter is a split half, so you receive the same variety of cuts in half the quantity. A typical share includes:
Steaks: Ribeye, New York strip, tenderloin or T bone and porterhouse (your choice), sirloin, flank, skirt and flat iron.
Roasts: Chuck roast, brisket, rump or round roast, and tri tip.
Everyday cuts: Short ribs, stew meat, and a generous amount of ground beef. Ground beef is usually 35 to 45 percent of your take home weight and it is some of the best burger you will ever cook.
Extras on request: Soup bones, marrow bones, oxtail, liver and other organ meats, and beef fat for rendering.
You choose how it is cut. Thickness of steaks, number of steaks per package, roast sizes, package sizes for ground beef, and whether you want bones left in or taken out are all up to you. If you have never filled out a cut sheet before, Evan walks you through it over the phone and recommends a standard cut that works well for most families.
How it works, step by step
1. Reserve your share. Place the $150 deposit online for a quarter or a half. Your contact info at checkout is how we reach you.
2. Build your cut sheet. Evan calls you to go over your cut preferences. This is a short, friendly conversation, not a form you have to figure out alone.
3. Processing. Your beef is dry aged, cut to your specifications, vacuum sealed, labeled and frozen at a licensed processor.
4. Pickup or delivery. We let you know when your order is ready, confirm the final hanging weight and balance, and arrange pickup in Bend. Local delivery in Central Oregon is available. Bring coolers or boxes and plan on about one large cooler per 50 lbs of beef.
Shares are available seasonally as animals finish, and halves tend to spoken for first. If you are planning to fill a freezer for winter, reserving early is the best way to make sure you get one.
Why Wagyu bulk beef is different
Most quarter and half beef sold in Oregon is standard grass fed or grain finished commodity cattle. Pioneer Ranch beef is full blood Wagyu, the same genetics behind the most sought after beef in the world. Wagyu lays down fine, even marbling all the way through the muscle, which means a richer flavor and a more tender bite in every cut, not just the ribeyes. Chuck roasts, round roasts and ground beef from a Wagyu animal taste nothing like their grocery store equivalents.
Our cattle roam freely on pasture just outside Bend, with no added hormones and no GMOs. In the final months they are finished on spent grain and mash from local whiskey distilleries, which adds a distinct depth and sweetness to the fat. It is the signature Pioneer Ranch flavor you will find on the menu at some of the best restaurants in Bend, and a quarter or half is the most affordable way to bring it home.
Is a quarter or half right for me?
A quarter beef is a great fit for a couple or a small family that eats beef a few times a week. It fits in a standard chest freezer, or in a dedicated upright, and lasts most households four to six months.
A half beef suits a family of four or more, anyone who entertains, or two households who want to split a share. You get the best per pound value, the full range of cuts in real quantity, and a freezer stocked for the better part of a year.
Not ready for a bulk order yet? Our Intro Beef Box is a $99 sampler with American Kobe ground beef, a New York steak and Korean short ribs, and a good way to taste the difference first.
Frequently asked questions
How much freezer space do I need? Plan on roughly one cubic foot of freezer space for every 25 to 30 lbs of packaged beef. A quarter needs about 4 to 5 cubic feet and a half needs about 8 to 10. A small chest freezer handles a quarter easily, and a mid size chest freezer handles a half.
How long does the beef keep? Vacuum sealed and kept frozen, your beef stays at peak quality for a year or more.
Can I split a half with a friend? Yes. Many of our customers go in together. We package the order as one share, and you divide it at pickup.
Do you deliver? We offer local delivery in the Bend area and can arrange delivery throughout Central Oregon. Ask Evan when you place your order.
When is beef available? Animals finish in batches through the year. Reserve with a deposit and we will tell you the expected timing for the next available share.
Can I choose my own cuts? Yes. Every share is cut to order and Evan goes over the options with you personally.
